Broccoli Salad aka not Waldorf

Ingredients

  • 1 head broccoli
  • 1punnet mixed red and green grapes
  • 100g dried cranberries
  • 1 tablespoon seed mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • 100g vegan mayonnaise

Method

  • Either grate or using a mandolin thinly slice the broccoli including the stalk.
  • Add all the remaining ingredients and mix thoroughly.
  • Taste may need a splash more vinegar or maple syrup

Empire Biscuits

Ingredients

  • 250g margarine
  • 100g icing sugar
  • 250g plain flour
  • 100g custard powder 

Method

  • Cream margarine and icing sugar together
  • Sift in flour and custard powder knead together
  • Rest for 10 mins. roll out, cut desired shape and bake at 180oC for 12 min

Scones

Ingredients

  • 500g self-raising flour
  • 10g baking powder
  • 125g stork 
  • 100g Caster Sugar
  • 225mls oat milk 

Method

  • Put the flour and baking powder into a bowl, add the stork and rub in using your fingertips (breadcrumbs)
  • Stir in the sugar
  • Add the oat milk and mix into the flour, stirring until a soft dough forms. The scone mix may be on the wet side 
  • Use your hands to push the dough out to about an inch thick
  • Use a scone cutter and push straight down (do not twist) lift out then place on a floured baking tray
  • Bake in the oven for 10-15 mins. The scones should be well risen and golden.

Festive recipes using bread:
Baked Brie & Garlic Crostini
Perfect for: Appetisers


How to make:
– Slice stale bread thinly, drizzle with oil, season with salt/pepper, bake to crisp.
– Serve with warm baked brie, cranberry sauce, or fig jam.
Festive touch: Garnish with rosemary “wreath” sprigs.


Cranberry-Orange Bread Pudding
Perfect for: Christmas morning or a warm dessert


How to make:
– Cube stale bread and soak in a mix of eggs, cream/milk, sugar, vanilla, orange zest.
– Stir in dried or fresh cranberries.
– Bake until golden.
Festive touch: Top with an orange glaze or powdered sugar “snow.”

Festive recipes using potatoes:


Dauphinoise Potatoes (Potatoes au Gratin)


Creamy, luxurious layers of thinly sliced potatoes baked with cream, garlic, and nutmeg.
Festive twist: Add gruyère or a bit of truffle oil.


Hasselback Potatoes with Garlic Herb Butter


Accordion-cut potatoes roasted until crisp on the outside and soft inside.
Festive twist: Brush with garlic butter and top with parmesan, rosemary, and toasted
breadcrumbs.

Community Fridge Success: 34.5 Tonnes of Food Saved

Did you know that since the community fridge launched in April 2022 we have saved over 34.5 tonnes of food waste from going to landfill.

Our dedicated volunteers go out three nights a week to collect usable food from local supermarkets and make it available Tuesday to Thursday each week from our community fridge from 10am – 1pm.

Thanks to our volunteers in the hub you can access food that would otherwise go to landfill but is perfectly usable.
